Roasted Balsamic Root Vegetables

This recipe is all over the internet, with only a few minor changes. It can be made in a crockpot or in the oven. I did the latter for Thanksgiving.

Ingredients

Directions - Oven Roasted

  1. Heat the oven to 375 degrees.
  2. Toss the vegetables and fresh garlic if used in oil and put in baking dish.
  3. Sprinkle with dried herbs if used.
  4. Roast for 20 minutes.
  5. Sprinkle on the cranberries.
  6. Warm the balsamic and honey/maple syrup in a small pan until sticky. Add spices if used.
  7. Pour over vegetables.
  8. Roast for about 45 minutes, or until browned but not burned.
  9. Add parsley, if used, and serve.

Directions - Crockpot

I have not made this and am just going by online recipes. Do an online search if you want more info.

  1. Place veggies and fresh garlic, if used, in greased crockpot.
  2. Mix in cranberries.
  3. Warm the balsamic and honey/maple syrup in a small pan until sticky. Add spices if used.
  4. Pour over vegetables.
  5. Cover and cook on HIGH 4 to 5 hours or until vegetables are tender. Toss with parsley just before serving.
